De Sambal - Per de Man

Here it is: De Sambal by Perry de Man! The Rotterdam (TV) chef and host of our own food show has developed this sambal (together with us), based on Per's own Toko recipe. Deliciously spicy, sweet & fresh. Spicy from the tasty peppers in it, sweet from the onion & sugar and fresh from the lime leaf, lemongrass and ginger. Garlic, tomato, galangal and turmeric make it super well balanced and we dare say this is going to be your new favourite sambal.

As Per himself says: no fuss, just bloody good sambal! Now we could give you all sorts of tips on how to use it, but honestly this stuff just makes everything taste better. From a rijsttafel to the simplest sandwich, throw Perry de Man's Sambal on top and it gets better. For years, he ran De Toko in Rotterdam, where he got to know loads of Indo and Moluccan people and made friends for life. But this book isn’t about him—it’s about the people he gives the stage to.

This cookbook tells the raw, unfiltered story of Indo and Moluccan food culture in the Netherlands. These kitchens are so much more than just a bunch of recipes.
