Traditional Tunisian Shakshuka
Together with TV chef Per de Man, we visited a Harissa producer in Tunisia this year. We quickly discovered just how flavorful Tunisia is. Not only through visiting the most delicious food spots and the harissa, but also through this shakshuka, which we made together with our Tunisian friends in the back of a truck. Ingredients (serves 4):
- 1 tbsp olive oil + olive oil to taste
- 3 onions
- 4 cloves of garlic
- 2 (large) tbsp tomato paste
- 1 tbsp harissa
- 1/2 tbsp salt
- 1/2 tbsp pepper
- 1 tbsp turmeric
- 1 tbsp coriander seeds
- 1 tbsp caraway seeds
- 1 tbsp chili powder
- 8 tomatoes
- 2 green peppers
- 3 eggs
- Optional: baguette for dipping
Preparation:
- Add the olive oil to the pan.
- Chop the onion into small pieces and crush the garlic. Add these to the hot oil.
- Once the onion is translucent, add the tomato paste and harissa. Stir this together well.
- Next, add the salt, pepper, turmeric, coriander seeds, caraway seeds, and chili powder. Mix this together well.
- Cut the tomatoes into small pieces and add them. Let this simmer for a while.
- Then slice the green pepper into rings and add to the pan.
- Let this cook for a while.
- Next, make little wells in the pan where you can add the eggs. Distribute the three eggs across the pan.
- Let this sit until the eggs are cooked.
- Add a bit more olive oil to taste and your shakshuka is ready. Delicious for dipping with some freshly baked bread.
