Spicy pumpkin soup

One of the benefits of hot sauce is obviously that it warms you up nicely when it’s cold outside, and that’s exactly what this pumpkin soup does too. The ultimate autumn soup. We make it even more autumnal by adding a good dose of hot sauce. Raijmakers Heetmakers Tranquilizer is our sauce of choice and with fresh habaneros, sweet potato, smoked paprika powder, garlic and onion, it seems made for it. So next time it’s a bit chilly and rainy outside, you know what to make.

Ingredients (serves 2):

* 1/2 butternut squash, peeled, deseeded
* 1 tablespoon olive oil
* 1/2 tablespoon butter
* 1 onion, chopped
* 1 clove of garlic, thinly sliced
* 425 ml vegetable stock
* 2 tablespoons cream and some extra for serving
* a few generous splashes of Raijmakers Heetmakers Tranquilizer Hot Sauce
* Pepper and salt to taste
* A few sprigs of parsley

Method

* Preheat the oven to 200 degrees
* Place the pumpkin cubes on a baking tray and drizzle with half of the olive oil.
* Roast the pumpkin cubes for 15 minutes, turn them over and roast for another 15 minutes until golden brown and soft.
* Melt the butter and the rest of the olive oil in a large pan. Add the chopped onion and garlic.
* Cover the pan and leave on the heat for 15 to 20 minutes, until the onions are soft.
* Add the pumpkin to the onion and garlic. Add the stock, cream and hot sauce. Blend into a smooth mixture using a hand blender.
* Heat the soup in a pan and season with pepper and salt. Finish with an extra splash of hot sauce, some extra cream and parsley.
