Indian Fried Chicken Burger with The Sunny hot sauce
Last summer (2024), I was at Down The Rabbit Hole festival where I came across an Indian Fried Chicken Burger at Mission Masala’s food truck that blew me away. It might have partly been because my expectations for festival food usually aren’t that high, but this was truly one of the best chicken burgers I’ve ever had. From that moment on, I decided to try and “recreate” this burger, without having a recipe of course. The result is pretty good, if I do say so myself!
Indian Fried Chicken Burger
The original was a perfect combination of crispy, savory, fresh, and a bit spicy. One of the stars of the show was, in my opinion, the madras mayo, which we tried to recreate by mixing our The Sunny hot sauce with mayo. And boy, is that a good mix! It’s present in a generous amount on top of the fried chicken, but also in the cabbage salad with mint & coriander.
