Spicy Sandwich #5: Spicy spaghetti sandwich with mozzarella
Got leftover spaghetti? Don’t you dare throw it away. This recipe gives leftover pasta a second life as a crispy, cheesy sandwich. The outside turns golden brown and crunchy, while the spaghetti and mozzarella stay soft and creamy on the inside. Finish it off with a generous drizzle of Raijmakers Heetmakers Tranquilizer and you’ve got yourself one seriously spicy lunch (or hangover breakfast).
Recipe: Spaghetti sandwich with mozzarella and hot sauce

Ingredients
- 4 slices of (sourdough) bread
- 250 grams leftover spaghetti (preferably at least a day old)
- 2 eggs
- 50 g flour
- 75 g cornflakes or panko
- 125 g mozzarella
- Raijmakers Heetmakers Tranquilizer, to taste
- A few basil leaves
- Salt and pepper
- Oil for frying
How to make the crispy spaghetti
- Shape the spaghetti
Scoop the cold spaghetti into a small container or shallow dish. Press the pasta down firmly to create a compact slab or ‘block’. Let it firm up in the fridge for at least 30 minutes. Got frozen spaghetti? Let it thaw completely first, then press it down. - Set up your breading station
Get three bowls ready: one with flour, one with beaten eggs and one with crushed cornflakes or panko. Season the flour with a pinch of salt and pepper if you like. - Bread the spaghetti
Coat the compact spaghetti first in flour, then in egg and finally in the cornflakes or panko. Press the coating down gently so it sticks properly. - Fry until golden brown
Heat a layer of oil in a frying pan over medium-high heat. Fry the spaghetti on both sides for a few minutes until golden brown and crispy. You can also deep-fry it at 180 °C until the crust is beautifully golden. Let it drain on kitchen paper.
Building the sandwich
- Toast the slices of bread briefly in a pan or toaster.
- Top one slice of bread with the crispy spaghetti.
- Add the mozzarella. For extra melty results, place the sandwich in a warm pan with a lid on top for a moment, or use a kitchen torch.
- Drizzle Raijmakers Heetmakers Tranquilizer Hot Sauce all over it.
- Finish with fresh basil.
- Place the second slice of bread on top and cut the sandwich in half.
Storage tip
You can shape and bread the spaghetti in advance and keep it covered in the fridge for up to one day. Only fry it just before serving so the crust stays nice and crispy.
