This Morita 3 Year Aged Soy Sauce is a saishikomi soy sauce (a premium soy sauce), which has been double-fermented with existing soy sauce, giving it a deeper, more complex flavour. It’s naturally fermented without any additives and has aged for three years in Japanese cypress wood barrels. It’s made from Japanese soybeans and wheat, and sun-dried salt. The taste is typical for saishikomi: deep, lingering, round in the mouth, slightly sweet and incredibly rich in umami.
You can use it in all your dishes instead of salt, and it really shines as a finishing touch (sushi, sashimi, salad dressings, etc.) rather than during cooking, especially with a product of this quality.
